Not too sweet and a citrusy pop of flavor, this fresh lifestyle Monday recipe is perfect for spring! Since most of us are having a hard time keeping track of what day it is a Monday cocktail recipe is fitting, we’ll pretend it’s Friday! Plus, the Pleasant Ave listing closes this afternoon so a celebration cocktail will be necessary! This has been my favorite at home happy hour drink lately. It’s light, simple and has a very slight spice to it!

This cocktail is great for warmer weather because of the fresh citrus. Grapefruit juice is my fav but any type of citrus will do. Blood orange and key lime juice are also soooo good! Don’t have the time or energy to squeeze your own? Whole Foods carries small bottles of fresh pressed juices in the produce section to keep on hand!

Some of the drink recipes I’ve tried call for seeded and sliced jalapeños, to save the hassle and hazard of getting the spice on my fingers, I found this amazing jalapeño concentrate from Monin. It’s pure jalapeño juice, no added sugars, colors or syrups. I love the added spice it brings to a ton of different drinks, including margaritas! They also have a habanero concentrate but I dont have the guts for it. It’s potent, you only need alittle for some spice but as always, adjust the ingredients to your liking!

Spicy Grapefruit Coupe

1 1/2 OZ FRESH SQUEEZED GRAPEFRUIT JUICE
1 tsp RAW HONEY w/1 tsp WATER 1/4 tsp JALAPEÑO CONCENTRATE
1 1/2 OZ VODKA (sub more soda for a virgin cocktail)
TOP WITH SPARKLING SODA CITRUS PEEL FOR GARNISH
*USE ORGANIC WHEN POSSIBLE

1) Add grapefruit juice, jalapeño & vodka to a martini shaker filled with ice.
2) Place raw honey + water in a microwave safe glass and heat for 5 seconds, just until honey melts into water. Add to martini shaker.
3) Shake well to chill thoroughly and pour into coupe glass. 4) Top off with sparkling soda and citrus garnish. *This recipe makes 1 drink, double for additional drinks.

This cocktail is very versatile. It can be made with different types of liquor, tequila pairs perfectly! Strained into an icy coupe glass is my favorite way to enjoy but a lowball with ice works too. Be creative and happy Monday!
